Senior week activities ended early so we left campus to go to Panera to grab lunch even though I brought a salad. Tomato soup. Mmmm!
Homemade Burrito Bowl!
Cook the quinoa with 2/3 cups of water (toss it all in and wait for it to boil, when the water is completely soaked, it’s an indication that’s it’s done) and squeeze in lime and salt. Cook black beans according to instructions on bag (or you could used canned). Grill the green peppers. Top with guacamole and salsa and voila! Time for a deeliisssh dinner :)
