Homemade Burrito Bowl!
Ingredients: 
1/3 cup quinoa
1/4 cup black beans (precooked measurement)
1/2 green pepper
2-3 tbs guacamole
2-3 tbs salsa
lime
salt
Cook the quinoa with 2/3 cups of water (toss it all in and wait for it to boil, when the water is completely soaked, it’s an indication that’s it’s done) and squeeze in lime and salt. Cook black beans according to instructions on bag (or you could used canned). Grill the green peppers. Top with guacamole and salsa and voila! Time for a deeliisssh dinner :)

This is my take on a Vietnamese salad, and the recipe makes one serving!

What you’ll need:

  • one square of baked tofu (okay, so maybe the tofu is more Chinese than Vietnamese)
  • seasoning for the soy baked tofu (I used soy sauce, Chinese 5 spice-McCormick, and cayenne pepper-Trader Joe’s)
  • Pam
  • Lettuce (I chose organic baby romaine)
  • one small carrot-sliced
  • one persian cucumber
  • 3/4 cup bean sprouts
  • rice vinegar
285 calories. 25g protein.

These were a total hit at the party. They were the first things to be completely finished! Everyone had rave reviews—they said they tasted amazing. However, I wouldn’t know as they had meat in them, and being a vegetarian.. Well, you know :)
Ingredients
  • 30 medium sized crimini mushrooms (not the super small ones, please!)
  • 1/2 cup red bell pepper (about 1/2 a bell pepper)
  • 1/2 cup green bell pepper (one small bell pepper or 1/2 a large bell pepper)
  • 1/3 cup white onion
  • 1 garlic glove
  • 3 tbsp panko breadcrumbs
  • 1 tbsp flat-leaf Italian parsley—more for decoration, if you’d like
  • chicken apple sausage (any type of sausage works, really)—I used two sausages from Trader Joe’s, about 5 oz. Also, if you’re vegetarian, you can do this minus the sausage
  • salt
  • pepper
  • PAM!

Instructions

  • Wash the mushrooms and pull out the thingymabobber/stemthingy, so that it’s just the cap of the mushroom. Then, with the top of the mushroom down, lay them on a sheet of aluminum foil sprayed with PAM, and place them in the oven at 350 for about 15 minutes. Before placing them in the oven, spray the mushrooms with another coat of PAM.
  • Throw the sausage into a skillet sprayed with PAM, and ground the sausage up with a wooden spatula. The sausage should be in small chunks and slightly browned by the end (keep in mind that the sausage from Trader Joe’s is already cooked)
  • Sautee the onions in a skillet sprayed with PAM until onions turn translucent (medium heat). Then, toss in the red bell peppers. After those seem tenderized, toss in the garlic and allow it to brown. Then, sautee it with the parsley and breadcrumbs for another 1-2 minutes over medium heat. Stir in the sausage. Season with salt and pepper
  • Just fill those mushrooms up with the stuffing. And you’re done!
